I am using a Linux distro with Firefox 45.0.1 -- which, naturally, is
not a nightly release -- and which will not allow me to save the login
name and password when I go a new site. I have looked at the FF Help page:

https://support.mozilla.org/en-US/kb/security-and-passwords-settings

but the tick-box shown there under LOGINS "Remember Logins for sites" is
greyed out in my copy of FF 45.0.1 and, therefore, unavailable to me.
(Come to think of it, this has been the case for a very long time now.)

Could some kind person please tell me if this feature to save login
name/password is no longer available and the Help page I mention above
is therefore out-of-date, or is there a setting which I don't know about
which will re-activate this "Remember logins for sites" feature?

It seems that your prefs may have been screwed with.

Go to about:config and tell it yes, you'll accept damages if it asks.

Search for remember.

The two (out of a small handful) I would look at would be

signon.rememberSignons

signon.rememberSignons.visibilityToggle

And maybe even services.sync.prefs.sync.signon.rememberSignons if you have sync turned on.

The default is true.
